La Birria is a dish originally from Cocula, it is very representative and is part of the gastronomy of the Mexican state of Jalisco. For some years its popularity has spread to other states and is part of Mexican gastronomy, it is a dish originally based on mutton meat (although it is also prepared with beef), marinated with a preparation based on some types of chiles, seasonings and salt.
